This award-winning 100% Kona green coffee is grown, processed, stored, milled, and shipped directly from our family farm in South Kona, Hawaiʻi. It is crafted using the Honey Process—the signature processing method of Aloha Star Coffee—for roasters seeking a sweet, fruit-forward expression of authentic Kona coffee.

While the Washed Process is Kona’s traditional processing method, Honey Process coffee is less commonly produced in Hawaiʻi. At Aloha Star, it is not an occasional experiment: it is a defining part of our farm and the processing method for which our coffee has received national and Kona cupping recognition.

What Is the Honey Process?

After ripe red coffee cherries are hand-picked, the outer skin is removed while some of the fruit’s natural mucilage remains around the parchment-covered seeds. Instead of removing that mucilage through the fermentation and washing stages used in traditional Washed processing, we carefully sun-dry the coffee with the mucilage still attached.

This sticky, honey-like texture during drying gives the process its name. No honey, flavoring, sugar, or other ingredients are added.

Honey processing can bring together the clean structure associated with Washed coffee and some of the fruit intensity and sweetness associated with Natural coffee. The final flavor profile will depend on the roaster, equipment, roast development, and brewing method.

Expected Roast Potential

This versatile green coffee can be developed across several roast levels:

  • Medium-light roast: Fruit-forward character, honeyed sweetness, lively acidity, and a clean finish.

  • Medium roast: Caramel, brown sugar, cocoa, ripe fruit, balanced sweetness, and a rounded body.

  • Full City or medium-dark roast: Deeper chocolate, toasted-nut, and caramelized-sugar notes, with fuller body and more subdued fruit.

  • Dark roast: Rich cocoa and roasty depth for customers who prefer a bold cup, although the most delicate fruit notes will become less prominent.
