Natural Process and Medium-Light Roast

For the Natural Process, only ripe coffee cherries are selected and dried slowly with the fruit surrounding the beans. During this extended drying period, the coffee develops greater fruit intensity, natural sweetness, and aromatic complexity.

After drying, the fruit and protective layers are carefully removed before the green coffee is prepared for roasting.

We use a medium-light roast to preserve the Gesha variety’s delicate floral qualities and vibrant fruit notes while developing a smooth, balanced sweetness. The result is an elegant, expressive coffee with a complex aroma and a fruit-forward finish.

Gesha—also commonly spelled Geisha—is an Arabica coffee variety internationally celebrated for its floral aromatics, refined sweetness, and complex fruit notes.

When grown in South Kona and combined with our Natural Process, the variety produces a distinctive expression shaped by our farm’s growing conditions and production methods.

Are Gesha and Geisha two different coffee varieties?

No. Gesha and Geisha generally refer to the same coffee variety. The two spellings developed through the variety’s history and international use.

We use “Gesha” in the product name while also including “Geisha” to help customers recognize both accepted spellings.

How is this Gesha different from your other Kona coffees?

This coffee is especially floral, aromatic, and fruit-forward. Our Washed Process coffees offer a cleaner, more classic Kona profile, while our Honey Process coffees provide balanced fruit and sweetness.

The combination of the Gesha variety and Natural Process creates a more expressive cup with jasmine, berries, tropical fruit, and honey-like sweetness.

What does Natural Process mean?

In the Natural Process, the coffee cherries are dried with the fruit still surrounding the beans. The whole cherries are carefully monitored and turned during drying until they reach the proper moisture level.

The dried fruit and protective layers are then removed. This method commonly produces greater fruit intensity, sweetness, aroma, and body than the traditional Washed Process.

Is this coffee artificially flavored?

No. This coffee contains no artificial or natural flavor additives, syrups, sweeteners, or other ingredients.

The jasmine, apple, pear, berry, mango, and honey notes are naturally developed through the coffee variety, growing environment, processing method, and roast profile.

Why is this coffee roasted medium-light?

A medium-light roast protects the Gesha variety’s delicate floral fragrance and layered fruit notes. A significantly darker roast could cover some of the characteristics that make this variety distinctive.

The roast is developed enough to create sweetness and balance while allowing the coffee’s natural complexity to remain noticeable.

What is the best way to brew Kona Gesha coffee?

We recommend pour-over brewing because it provides clarity and allows the coffee’s floral and fruit notes to emerge.

Use freshly filtered water, grind immediately before brewing when possible, and begin with a coffee-to-water ratio of approximately 1:16. For example, use 20 grams of coffee with approximately 320 grams of water and adjust according to taste.

Can I prepare this coffee in an automatic drip machine?

Yes. An automatic drip coffee maker can produce an excellent cup, particularly when used with freshly ground coffee and filtered water.

Select the regular-drip grind when ordering ground coffee for this brewing method.

Can this Gesha coffee be used for espresso?

Yes. As espresso, it may produce a more concentrated presentation of its berry, tropical-fruit, floral, and honey-like qualities.

Select the fine-espresso grind if you do not have a grinder. Because espresso equipment varies, you may need to adjust the dose, grind, extraction time, or water temperature.

Gesha represents only a portion of the coffee grown on our farm. The trees, ripe cherries, processing space, drying time, sorting, and final yield all limit how much can be produced during each harvest.

Availability may therefore change throughout the year, and some sizes may sell out before others.
