Cinnamon Bliss began with co-founder Armando’s memories of Mexican café de olla and café con canela. Ripe estate-grown Kona coffee cherries are fermented in water with cinnamon bark for 24 hours, then pulped and sun-dried with their natural mucilage remaining in the Honey Process style.

The coffee is not sprayed or flavored after roasting. Instead, cinnamon participates during fermentation, creating a subtle cinnamon and warm-spice character alongside the fruit, brown-sugar, and honey-like notes of the coffee. A Medium-Light roast keeps the cup aromatic, sweet, and balanced.
